The Starters



Tsibelles mit eier
Ingredients : 3 to 4 tablespoons of fat (oil, schmaltz...); 4 large onions; 6 to 8 hard-boiled eggs; salt; pepper
Recipe : Melt the onions, cut into small rectangles, in schmaltz, lard or oil. Season lightly with salt and pepper and stir until they are lightly caramelized (1/2 hour).
Chop the hard-boiled eggs into small pieces and add them to the softened onions. Mix and serve (warm or cold).
A variation for the eggs: beat them raw and pour them into the pan on top of the onions, breaking them into small pieces with a wooden spoon in the pan, the onion and egg mixture happening directly.

Chopped liver
Ingredients : 500g chicken livers, 3 onions, 3 hard-boiled eggs, oil, salt, pepper
Recipe : Peel and chop the onions into small pieces. Hard-boil the eggs. In a large pan of hot oil, fry the onions over medium heat until golden brown.
Put them in a salad bowl.
Chop the chicken livers into very small pieces. Sauté them in a pan until they have reduced in size. Add them to the salad bowl. Chop the hard-boiled eggs into small pieces.
Add them to the salad bowl.
Mix well, then finely chop with a manual chopper. Season and mix everything together well.
Place in the refrigerator for one hour.
Serve chilled with rye bread or Halleh or matzah!
